Abstract

Because global food systems contribute approximately a third of anthropogenic greenhouse gas emissions, shifts to sustainable diets have been recommended as an effective climate change mitigation strategy. At the same time, current Western diets are associated with greater risks of diseases such as type 2 diabetes, cardiovascular diseases, and certain cancers. But are diets with lower climate impacts always healthier than current diets? And how to change dietary patterns in the population, when food is culture, comfort, and commercial interests?
